Notes: This is a very complex rum from a production standpoint using totally unique stills that are the only ones of their kind left in the world. They use a combination of 3 different stills each one delivering a totally different spirit. The first on is a wooden Coffey still (Coffey stills are usually used in the production of Irish Whiskey and some gins).The second is a wooden (and copper top) pot still and finally a Savalle Still which is a type of copper continuous still.The rum is then aged in 45 gallon used once whiskey (read bourbon) barrels, blended, then rested again and allowed to marry before bottling.
One of the many expressions from this distillery the others being El Dorado , El Dorado Finest Demerara , El Dorado Superior Demerara (12 Year Old), El Dorado Special Reserve (15 Year Old) , and El Dorado 25 Year Old. This one is aged in Guyana for three years then charcoal filtered back to clear/white so unlike many raw white rums (read Bacardi) you have the benefits of aging knocking off the edges.
Appearance: Looks like a puddle of molten glass, on swirling very thin coat on glass and legs slowly forming along with droplets.
First Impression: Coconut, vanilla, white chocolate, buttery, fresh coconut cream pie smell, some char/leather notes very pleasing.
Taste: Mixed entry, first sweet then drying. Grassy/cane,mineral notes, créme bruleé. Medium bodied, nice long finish.
Drinks: Any drink calling for a white rum or a Cachaca will shine with this one (yes, there are differences between the two but. . .). Reasonably complex a good backbone to it. Certainly cheap enough to use as a mixer and good enough to make a superior drink.
Cigars: Nothing too heavy. A good natural or shade wrapper cigar by a local hand roller would do nicely.
Bottle/Packaging: Standard clear glass,looks like a scotch bottle. Neck/wrap label prominently states "5 Years Old" Above a rectangular paper label with a drawing of a Galleon on the label . Gold colored screw cap with El Dorado silk screened on it completes the package.
Final Thoughts: A very complex and delicious rum,especially for the money. A very unique rum from a distilling point of view, the El Dorado series would be a great good candidate for a vertical age tasting or flight. If I didn't know better I would almost think this was an agricole rum - has a number of the same flavor notes you find in that category rather than a molasses based rum. This rum costs about the same as Bacardi and is infinitely better.
